I love to eat! I mean, come on, food is fuel, yes, but it is also yummy! On this journey, I have discovered so many different foods that I never liked before, but now I really enjoy! It has been really fun to go a little bit outside my comfort zone (and my family’s) and try different things. When you stop to look at the wide variety – just in the produce section of the grocery store – it is amazing what grows on this planet. I truly am amazed at all the colors (and some of the crazy names) of the foods out there!

Since meal planning has become kind of a big deal to me (it is just critical for folks losing or managing weight), I have made an effort to try a few new recipes a week. As you can imagine some have been really good, and some have totally tanked. I thought I would share some of the really good ones with you and spare you the disasters! I’ll include the Weight Watchers points and/or the nutritional information if I can. Most of them are fairly simple because there are too many other things in life that are complicated. Life is too short not to enjoy our food!
