Fresh Fork Week #2

Here is this week’s haul!

We have:
Spinach
Green Onions
Rhubarb
Strawberries – 1 qt
Broccoli
Lettuce
Pork Chops -2 pack

The biggest challenge for this week, besides the rhubarb, is getting this all consumed before leaving on vacation late Tuesday. It will happen, however, mark my words! We will eat the spinach, green onions and lettuce in salads for lunches. We will have the pork chops tonight for dinner with the broccoli and I’ve already been digging into the strawberries. They are amazing!! Now, let’s deal with this rhubarb. I’ve never eaten or cooked rhubarb, so this is a new one for me. I’ve never even eaten the quintessential rhubarb pie! At the truck yesterday I noticed they had rhubarb bread for sale (like quick bread) and that peaked my interest. I will have to do some research and see what sounds good!

  1. Good haul….we love rhubarb–usually use it in pies, but you can also mix it with the strawberries for a strawberry rhubarb pie. I have a recipe for a rhubarb custard pie that Rich loves…if interested, I’ll send it on!

  2. …and if you don’t get to the rhubarb this week, you can just wash it, chop it and put in a freezer bag…it freezes well!

  3. Lisa, you might want to make rhubarb strawberry pie or jam. The latter is maybe “easy as pie” whereas easy as pie generally applies if you buy the pie crust! Crust is easy but takes time, though, when it is humid can give you trouble.

    Rhubarb needs lots of sugar so best to combine with strawberries-besides it’s a great flavor combination!

    Fun fact: the Amish call rhubarb pie plant, or stemgel, in Deutsch.
